François Isambert took over the Pisciculture de La Fajolle, a fish farm at 1,150 metres in the Cathar Pyrenees, in 2008. After twelve years raising salmonids at the organic farm, he co-founded La Truitelle in 2019 to produce France's first AB-certified organic canned fish. The troutlings are rainbow trout aged at least eight months and weighing 12 to 40 grams, hand-canned without freezing. Winner of the SIAL Paris Innovation Grand Prix 2022. A direct answer to overfishing of sardines and anchovies, replacing pelagic species with farmed freshwater fish raised in mountain springs.
