Founded in Murcia in 1983, the first company in Spain to produce fish spherifications commercially, using mullet, herring, and salmon to create caviar-substitute products sold under the Shikrán brand. The process uses spherification to replicate the texture and visual character of caviar. Over 40 years later, the company exports to more than 50 countries and holds kosher and halal certifications.
