A Cantabrian anchovy producer working out of the Santoña tradition, one of the cluster of small family operations that made the town's anchovies a protected designation. The range stays close to what Santoña does best: salt-cured, hand-filleted Cantabrian anchovies in olive oil, with enough curing time to develop genuine depth.
