The family has been preserving anchovies in L'Escala, on the Costa Brava, since 1847, using the same salt-curing process the ancient Greeks practiced in the same bay centuries before them. Mediterranean anchovy stocks are now largely depleted, so the fish comes primarily from the Cantabrian fleet, but the curing and hand-filleting tradition remains entirely L'Escala.
