Fernando Antioco Fois runs this four-person operation two blocks from the shore on Sant'Antioco, a small island off southwestern Sardinia with ancient tuna-fishing roots. Twenty large bluefin tuna per year, hook and line caught only in May, processed entirely by hand into ventresca, tarantello, buzzonaglia, bottarga, and smoked fish. Founded 2003. One of the rarest tinned fish producers in Europe.
